During a recent check up I visited the Wellness Centre at Peter MacCallum Hospital and stumbled upon a cooking class run by chef Valentin Corchado. I sat down to watch and the next thing I know I'm making Calamari Meatballs. Valentin had prepared all the ingredients. I got to throw them in a bowl, mix, roll, cook and taste. The meatballs were delicious! Valentin says you can substitute the calamari for prawns. I will have to try this next.
Ingredients
- 500 grams calamari tubes finely chopped
- 1 egg
- 2 garlic cloves finely chopped
- 1 red dry chilli chopped (optional)
- 3/4 cup of breadcrumbs
- 1 tsp black ground pepper
- Himalayan salt to taste
Method
- Mix all ingredients in a bowl and refrigerate for about 15 minutes
- Lightly oil your hands with a bit of oil and roll the mixture into small balls
- Dust in plain flour (you can use any flour)
- Fry balls in olive oil until golden brown
Plating
- Serve hot with a slow roasted tomato sauce
- Sprinkle freshly chopped parsley and roasted almond flakes
